Instant Pot Chicken Tortilla Soup
A warming, smoky soup ready in under 30 minutes start to finish.
Ingredients
- 1.5 lbs boneless chicken breasts
- 1 can diced tomatoes
- 4 cups chicken broth
- 1 can black beans, drained
- 1 cup corn
- 2 tbsp taco seasoning
Instructions
- Add chicken, tomatoes, broth, beans, corn, and taco seasoning to the Instant Pot.
- Seal and cook on high pressure for 12 minutes, then quick release.
- Shred the chicken directly in the pot and stir back in. Serve with tortilla strips and lime.
