Classic Stovetop Mac and Cheese

1 lb elbow macaroni
3 cups sharp cheddar, shredded
3 tbsp butter
3 tbsp flour
3 cups milk
to taste salt and pepper

Instructions

Cook the macaroni according to package directions, then drain.
In the same pot, melt butter and whisk in flour to form a roux. Gradually whisk in milk until smooth and thickened.
Remove from heat and stir in the cheddar until melted. Fold in the macaroni and season to taste.
